Situated on the outskirts of Zollino, the oil mill was built between the end of the 17th and the 18th century. Modest in size, it remained operational until 1940 but was then abandoned.
Entirely dug out of the rock, it consists of a single room walled with slabs of Lecce stone. Access is via a stairway, to the sides of which are four recesses in the rock which were used for storing olives.
The steps lead down into a circular room containing the millstone, off which is a stable with animal troughs, the kitchen and a rest area for the workers. The parts of the mill containing the millstone and for the decantation and storing of the oil are also perfectly preserved.
