A fine example of an underground olive oil mill dating back to the 17th century. Known in Salento dialect as a trappeto, and designed for the production and storage of olive oil, it was dug out of the rock in the centre of the charming little town of Melpignano, renowned for the quarries of Lecce stone that have helped the local economy to flourish.
Access to the mill, which was dug entirely out of the rock, is via a small stairway with a barrel-vaulted ceiling that leads into the main room, where the olives were milled and pressed.
